Pumpkin spice and everything nice — but make it protein. These White Chocolate Protein Pumpkin Muffins are soft, fluffy, and studded with sweet white chocolate chips. With pumpkin puree, oats, Greek yogurt, and a scoop of HCODE Vanilla Cake Protein, they’re the perfect way to celebrate fall while keeping your nutrition goals on track.

📝 Ingredients (12 Muffins)
1 cup pumpkin puree
2 large eggs
½ cup cottage cheese
¼ cup Greek yogurt
¼ cup maple syrup
2 tsp vanilla extract
1 ½ cups old-fashioned oats
1 ½ tsp pumpkin pie spice
1 tsp cinnamon
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 scoops HCODE Vanilla Cake Protein Powder (~60 g)
¾ cup white chocolate chips (plus extra for topping)
👩🍳 Instructions
Preheat oven to 350°F. Line a muffin tin with paper liners or spray with nonstick spray.
In a blender, combine all ingredients except white chocolate chips. Blend until smooth (about 45–60 seconds).
Transfer batter to a mixing bowl and fold in the white chocolate chips.
Scoop the batter evenly into 12 muffin cups. Top with a few extra chips if desired.
Bake for 26–28 minutes, or until a toothpick comes out clean.
Cool for 5 minutes in the tin, then transfer to a wire rack.
